The Shingleback wines are hand-crafted primarily from the Davey Estate vineyard and are made in a style that expresses the essence of McLaren Vale. These wines are lush, fruit-forward and food friendly, both appealing on release and worthy of cellaring.

Kiss Me Kate Chardonnay

Fruit from low-yielding vines near Woodside planted in 1994 (86% of the blend) is complemented with the balance (14%) taken from 30+ year old Mendoza clone vines from McLaren Flat. Harvested in the cool of the night, the free run juice is quickly separated from the skins. The juice is naturally cold settled (using no enzyme or sulphur dioxide) and racked to ferment. 25% of the wine completes a steady fermentation at 12 - 18˚C in stainless steel. The balance is fermented in new & one year old, fine grained French oak hogsheads. This regime, and the use of multiple strains of yeast, adds complexity and a creamy texture to the palate.

Black Bubbles Sparkling Shiraz

Deep garnet in colour with vibrant magenta bubbles. Aromas of concentrated blackcurrant with hints of liquorice, spice and dark cherries. Creamy bubbles and luscious sweetness envelop the plump blackberry mid palate, which is enhanced with hints of savoury development. The long sweet fruit finish is balanced with fine tannin and acidity.

This is a non-vintaged wine blended from a number of years of Shiraz to create complexity and consistency in the style.

Kitchen Garden Mataro

Deep red. Brooding primary aromas of bramble and mulberry are enhanced with notes of earthy chocolate and spice. The generous palate overflows with rich blackberry flavours, balanced by a natural acidity. Moreish chewy and savoury tannins complete this medium to full bodied Mataro.

El Capitán Tempranillo

Bright cherry red in colour. Fragrant liqueur cherry aromas are supported by elements of roses, tobacco and earth. Rhubarb and red apple pie flavours flow through the palate of this medium bodied wine.

Local Heroes Shiraz Grenache

Vibrant purple-red. The Shiraz, grown on loamy clay, contributes the dark fruit of blackberries and mulberries to the blend, whilst the hand-picked, old bush vine Grenache (grown on deep sand over clay) adds rosy floral and savoury notes. Small batch open fermentation and maturation in older oak ensures the proven synergy of these two, equally matched, McLaren Vale Local Heroes.

Vintage Fortified Shiraz

In the highly acclaimed 2016 vintage a couple of special rows of Davey Estate Shiraz were left to concentrate until late in the season. At the optimum designated moment of fermentation, grape spirit was added to lock in the sweetness and preserve the wine.

This fortified Shiraz will reward careful cellaring. The sweet dark compote of fruit flavours is enhanced with the spirit warmth, matching beautifully with coffee and chocolate or a selection of cheeses.
